From 26 to 28 July 2024, more than 85,000 people attended the Perú Mucho Gusto food festival in Tacna. Among more than one hundred exhibitors, the Picis ceviche stand generated a long waiting line, according to El Comercio's on-site report.

Despite its length, the service queue moved efficiently. Customers were waiting for a plate combining fish ceviche, fried seafood and seafood rice. More than half of the exhibitors sold out by the early hours of the final day.

This was more than a predictable line at a popular stall. A tourism programme that assembled regional cuisines in one venue turned a coastal dish into an ordered wait in a southern border city. The speed of the line was itself part of the stall's craft.
