Simbang Gabi is the Philippine sequence of nine dawn or evening masses before Christmas. After worship, long lines form outside churches for bibingka and puto bumbong. A 2025 Manila Bulletin report says stalls near the Antipolo shrine draw long lines during each mass and advises customers to pre-order if they want a smoother takeaway.
Bibingka is a baked rice cake, while puto bumbong is a purple sticky-rice delicacy traditionally steamed in bamboo tubes. Both are seasonal markers of Simbang Gabi. Because worshippers emerge at roughly the same time, demand gathers between devotion and breakfast. People are waiting not only to satisfy hunger, but for the familiar aroma that makes Christmas feel one day closer.
